1. Ingredients to be prepared
- 15g gelatin leaves;
- Sugar 200g;
- Water 80g;
- 150g corn syrup;
- Vanilla essence 4g;
- 5g dried strawberries;
- Soft strawberry jam 15g;
- Cornstarch 50g.
2. How to make strawberry marshmallow – green tea
Step 1: Soak gelatin
Soak 15g gelatin in 500ml cold water for about 10 minutes.
Step 2: Cook the sugar
Put 200g sugar, 150g corn syrup and 80g water in the pot, stir well. Turn on the stove to cook on low heat until the mixture thickens, then turn off the heat.
Step 3: Dissolve the gelatin
Pour the cooked sugar water into a bowl, add 4g of vanilla essence to the soaked gelatin, gently stir until the gelatin dissolves. Next, use an electric mixer to beat the sugar mixture until smooth.
Step 4: Mix the strawberries and pour the mixture into the cake mold
Pour 1/2 of the sugar mixture into another bowl and mix well with the dried strawberries, then pour this mixture into the cake mold, spreading evenly. Before you put the cake mold into the sugar candy mixture, prevent the mold from sticking by applying a thin layer of cooking oil to the inside of the mold and then sifting with cornstarch so that the flour adheres evenly to the inside of the mold.
Step 5: Mix strawberry jam and ice cream bag
To make the pink coating for the candy, you just need to add 5g of strawberry jam to the rest of the sugar and mix well until the sugar is colored in a beautiful pink color. You then put this pink sugar candy into the ice cream bag and squeeze it over the dried strawberry sugar mix. This will be the final coating for your marshmallow.
Once the frosting is done, place the cake pan in the refrigerator and let the candy harden for about 2 hours. This process will help your candy solidify and have a better crunch.
Step 6: Cut the candy into cubes
After leaving the candy in the refrigerator for about 2 hours to harden, you can take the mold out of the refrigerator. Then, place the candy on a clean flat surface that has been rubbed with cornstarch to prevent the candy from sticking. Next, you can rub cornstarch evenly on the candy to prevent sticking and use a knife to cut it into bite-sized squares. Cutting the candy into squares makes it easier to use and store it later.
